Store your chocolate in a cool/conditioned dark area, avoiding direct sunlight and excessive humidity. Do not refrigerate your chocolate. Refrigerating chocolate risks destabilizing the temper via humidity and odor absorption from other grocery items. If you’d like to keep you chocolate for a much later date, you can enclose the box in a plastic ziplock bag with a paper towel and freeze. To thaw, leave bag sealed at room temperature for 24 hours before opening.
While not all of our chocolate is certified Fair Trade, we are certain that our makers are ethically sourcing directly from farmers or brokers who have direct relationships with farmers. If you’d like to know more about how our makers source their cocoa or you have questions about a specific maker/origin, please let us know and we’d be happy to give you more detailed information.
