Sirene Caramelised White


Cacao beans are approximately 50% cocoa solids (which can be ground in to cocoa powder) and 50% cocoa butter. When the beans are pressed, similar to pressing olives to get olive oil, you can extract this cocoa butter. This is what we use to make this chocolate bar. Our only additions are whole milk and organic cane sugar. The finished white chocolate is then oven roasted to caramelise the added sugar and the milk's inherent sugars to give a lovely roasted caramel color and flavor.
